This is a classic dessert of apples caramelized in butter and sugar - then baked with puff pastry in the oven. A great apple tarte tatin starts with the right apples - we suggest Granny Smith or Romas. Keep the apples from oxidizing by placing the peeled fruit in a tub of water with lemon juice. This recipe happens in a few parts - making caramel, preparing the apples and making your puff pastry.
