Focaccia can be topped with a variety of herbs, spices and vegetables. Yeast is the active ingredient and an instant read thermometer can be used to get water to the proper temperature for the yeast. Knead the dough and rub oil on it prior to allowing it to rest and rise. It should double in volume. Right before placing the dough in the oven, use a liberal amount of olive oil on the top and add the seasonings of your choice. Have patience while making this classic Italian bread, it has a savory taste and is perfect on your table.
